I have been cooking this recipe every week for the last month. It’s time to move on, but before I do, here’s the recipe (adapted from The River Cafe Book Easy)
Pork Loin Chops 4
Preheat the oven to 400 F, 200 C.
Heat the griddle pan until really hot. Season each chop and seal on each side in the griddle pan. Warm a tray, big enough to fit all the chops, in the oven. Cut the lemon and squeeze over the chops. Place the chops and lemon halves in the oven for ten minutes. Then press the lemon halves on to the chops and baste with the juice. After roasting for another ten minutes, remove from the oven. Delicious with small roast potatoes and green bean salad.
